Chocolate Silk pie is my favorite pie. It reminds me of my dad. He would always buy them frozen at the grocery store and let me steal a slice before it event defrosted.
What I know now is how stinkin' easy it is to make! The filling consists of 4 ingredients, that's it. Unsweetened chocolate, whole eggs, granulated sugar and a little bit of vanilla. I found the recipe in Smitten Kitchen's AMAZING cookbook. I made this particular pie for a friend who lives the gluten free life, so I opted to Against All Grain's Gluten free crust. The crust definitely needs some work (my bad, I didn't use the recommended brand of almond flour), but over all the pie was a huge it!
